Terry's Chocolate Orange Cupcakes

What better way to get in the festive spirit than with a chocolate orange cupcake? The cupcakes are chocolaty with a hint of orange and then topped with the creamiest orange icing you could imagine. The perfect taste to cleanse the palette.

You will need:
12 cupcake cases
muffin tin
piping bag and nozzles

Cupcake ingredients:
150g unsalted butter
150g caster sugar
120g self raising flour
30g cocoa powder
3 eggs
zest of 1 orange

Cupcake method:
Preheat the oven to 160c and line your muffin tin with 12 cupcake cases. In a bowl beat your butter and caster sugar together until fluffy.

Add the self raising flour, cocoa powder and eggs and beat slowly until all combined.

Fold in the orange zest and evenly divide you mixture between your 12 cupcake cases.
Bake for 15 - 18 minutes until a skewer inserted in the centre comes out clean.

Buttercream ingredients:
175g unsalted butter
500g icing sugar
orange food colouring
2 tablespoons orange flavour extract
Terry's Chocolate Orange - for decoration

Buttercream method:

Beat the butter for 3 - 4 minutes until smooth and fluffy.

Add the icing sugar 100g at a time and continuously whisk until thick and creamy. Add the orange flavour extract and the orange food colouring (you can add as much or as little as you wish depending on your desired colour) and stir in well.

Pipe your icing onto each cake and place a chocolate orange segment on the top to decorate.
