Mothers Day Cupcakes 5 Ways

Mothers day has to be one of the best days of the year. You get to celebrate and show you appreciate how much your mother does for you. Its the perfect excuse to buy beautiful gifts, spend time together and eat cake. But what better way to show your love and appreciation than baking your own cakes for the special day...

These can be chosen depending on your mothers favourite biscuit, sweet or fruit. Simple and easy to make yet delicious to eat. Regardless of your plans for the day you can gift your mother with the cakes to enjoy even when mothers day is over.
We went for a variety of different toppings and flavours for our cupcakes.
Ingredients for cupcakes: (recipe inspired by Jamie Oliver)
  • 225g unsalted butter
  • 225g golden caster sugar
  • 4 large free range eggs
  • 1 vanilla pod
  • 225g self raising flour
  • 1 teaspoon baking powder
Method for cupcakes:
  • Preheat the oven to 170c and line a cupcake tray with 12 cupcake cases.
  • In a mixing bowl beat together your butter and sugar until light and fluffy.
  • one-at-a-time crack the eggs into the mixture and beat together well until adding the next.
  • Split the vanilla pod in half and scoop out the seeds and add half of them to the mixture.
  • Sift in the flour and the baking powder and fold into the mixture.
  • Divide the mixture evenly between the cake cases and place in the oven.
  • Bake for 15 minutes until golden brown and a skewer can come out of the middle clean.
  • Place on a wire rack and cool completely before decorating.


When decorating your cupcakes you can add flavourings into the icing mixture to make the cakes taste as you desire. Whether this is a fruit flavour to match the topping or a flavour which will complement the topping. Each flavour is selected to achieve delicious flavoured cakes.

We have also added colourings to our icing for each cake according to the topping. This makes the cakes look pretty for mothers day.

Ingredients for icing:
  • 225g unsalted butter
  • 400g icing sugar
  • food colouring (optional)
  • food flavouring (optional)

Method for icing:
  • Beat the butter in a bowl until light and creamy.
  • Add in your remaining vanilla seeds ad sift in the flour.
  • Gentle fold in the flour and mix well until combined and light and fluffy.
  • Add your chosen colour and flavour to the mixture (divide the mixture if you want multiple icing colours/flavours).
  • Ice the cakes with your desired icing nozzle and place your toppings on.
