Easy Carrot Cake Muffins

Wanting to do some baking this easter but have no idea what you want to make? How about these super easy carrot cake muffins?
We love making these they are defiantly a house favourite and easter is just the perfect excuse to get the mixing bowl out and mix up a batch. Normally we have all of the ingredients already in so theres no need to pop to the shop we can just get straight on with making them.
You will need:                                                                  
175g light muscovado sugar                                            
100g wholemeal self raising flour                                   
100g self raising flour                                                      
1tsp bicarbonate of soda
2tsp mixed spice
2 eggs
150ml sunflower oil
200g carrots grated
Handful of walnut pieces (to sprinkle on top)

For the icing:
100g butter, softened 
300g soft cheese
100g icing sugar
1tsp vanilla extract
Step one: Heat the oven to 180c and line a muffin tin with 12 cases.
Step two: In a large bowl mix all of the ingredients.
Step three: Divide the mixture between the 12 cases and place in the oven for 20-22 minutes.
(Check if cooked by placing a skewer in the middle and if it come out clean there done)
Step four: Place on a wire rack to cool.
Icing method:
Step one: Beat the butter until really soft and beat in the soft cheese, icing sugar and vanilla.
Step two: Swirl on top of east muffin simply using a knife.
Step three: Sprinkle the walnuts on top.
