Vegan Banana Bread

Banana bread has to be one of our favourite things to bake and its super easy too! We have tried out several different recipes before finally creating the perfect one which also happens to be vegan too. There are lots of different ways you can change up this recipe to just how you like it. For this recipe we didn't add any fruit or nuts but instead added some dark chocolate. 

- 3 Large Bananas 
(You only need 2 for the mixture and 1 for decoration on the top)
- 75g Vegetable Oil
- 100g Coconut Sugar
- 225g Spelt Flour 
- 3 TSP Baking Powder 
- 3 TSP Cinnamon 
- 150g Dark Chocolate 
  (Or you can add fruit and nuts of your choice and as much or as little as you want!) 

When making banana bread, most people think that the bananas should be very ripe, covered in spots or black. When we make it we like the bananas to be ripe but only just so they still have a fresh taste.

 What you'll need:
- Mixing Bowl 
- Fork + Spoon
- Kitchen Scales 
- Chopping Board
- Sharp Knife 
- Measuring spoons (You only need the teaspoon measure)
- Small Loaf Tin

1. Pre heat the oven to 200c.
2. Grease your loaf tin. (We used vegan butter)
3. Cut up and mash the 2 Bananas together. 
4. Add in the 75g Vegetable oil and 100g Coconut Sugar and Mix until everything is combined.
5. Next add in the 225g Spelt Flour, 3 TSP Baking powder and 3 TSP Cinnamon
6. Chop up the Dark Chocolate into chunks and add to the mixture. 
7. Pour into your loaf tin and add your sliced banana to the top. 
8. Place in the oven for 20 minutes. 
9. Check your banana bread and if its getting too well done cover with foil and return to the oven for 30 minutes. 
10. A skewer should come out clean when it's fully cooked. 

Other options other then chocolate are Dried fruits such as: raisins, cranberries, banana chips and you can also use a variety of nuts. Our favourites would be Walnuts as they give it a nice crunch. 

This is what your Banana Bread looks like before you out it in the oven. We like to add a cut in half banana on top for decoration and an extra banana taste.
