Easy Vegan Snacks

Trying to be healthy but find yourself reaching for everything bad because its easier when you're in a hurry? We use these three quick and easy snack ideas to help us out in our busy lives! All of these are easy to prepare and have on hand whether its at home; on the school run or at your work desk. 
1. Nutty Granola 
Makes 1 Jar
Ingredients 
- 1 cup Oats (We use gluten free)
- 1/2 cup Pecans 
- 1/2 cup Cashews 
- 1/2 cup Walnuts
- 1/2 cup Almond flakes 
- 1/2 cup Maple syrup 
Method
1. Pre-heat your oven to 180 fan and line a baking tray with greaseproof paper.
2. In a large bowl combine your oats and nuts of choice.
3. Add in your maple syrup and fold over with a spoon until all of your dry ingredients are covered. 
4. Pour your mixture onto your lined tray and spread out. 
5. To get a chunky granola with the back of your spoon press down to compress your mixture.
6. Place in the oven for 10 minutes.
7. Get out of the oven and turn your mixture with a spoon so the granola at the edges is moved to the middle to prevent overcooking. 
8. Return to the oven for 8-10 minutes. 
9. Once your granola is cooked it is important to leave it to cool for at least 30 minutes. This will allow it to set into chunks.
10. Place in an airtight container and use within 7-10 days. (If it lasts that long! This one didn't)
2. Peanut butter & dark chocolate oat balls
Makes 6 
Ingredients
- 3/4 cups oats 
- 3 tbsp smooth peanut butter 
- 2 tbsp maple syrup 
- 1/4 cup dark chocolate chunks/ chips
Method 
1. Measure out all of your ingredients into a large bowl.
2. Combine and mix well.
3. This parts messy, using your hands role into 6 even balls.
4. Ready to eat right away!
3. Stuffed dates
Makes as many as you want 
Ingredients 
- Dates
- Peanut butter
- Nuts
- Raisins
- Dark chocolate
- Whatever you want to add! 
Method
1. Start by cutting your dates to remove the pit.
2. Add your filling/ fillings of choice.
